Cilantro Lime Rice
Ingredients - Makes 4-6 servings
2 rice cups of dry jasmine rice (see info on the bottom)
2 tbs butter
1 lime
3/4 cup cilantro (about a fistful)
salt
Equipment
A good rice cooker
A rice paddle
Instructions
1. Wash the rice really well.
2. Cook the rice according to your rice cooker's instructions. Read the notes below.
3. Meanwhile, juice the lime and finely dice the cilantro.
4. Once the rice is done, pour in lime juice, butter, and cilantro, and fluff the rice with the rice paddle as if
you were making sushi rice.
5. Salt and add more according to your own tastes.
Notes - About the rice
Basmati rice is impossible to find in Taiwan. When you walk into a grocery store, you see all these different types of Taiwanese rice but none of them are basmati. To substitute, you use jasmine rice, which is also long grained. The only problem with jasmine rice is that it is quite sticky. To remove most of the stickiness, you need to thoroughly wash the rice until the water is nearly clear. A good rice cooker and water to rice ratio is needed too. I use about 2 cups of rice to 1 3/4 cup of water for my rice cooker.
