Pinto Beans
Ingredients - Makes 4-6 servings
300g dried pinto beans (see info on the bottom)
5 stripes of bacon
1 tsp cumin
1 tsp cayenne pepper
salt
Equipment
A big enough pot
Time and patience
Instructions
1. Wash pinto beans in water.
2. Place beans in a pot and fill with about one or two inches above the beans.
3. Let the water boil and then turn down to a simmer.
4. Meanwhile, cook the bacon.
5. Once all the bacon is cooked, pour bacon fat in the beans.
6. Mince the bacon into bits (because bacon is awesome).
7. Add bacon to the simmering beans and stir.
8. After 1-2 hours, your beans should be done. I would check every 15 minutes to see if the beans are
done and if there is enough water.
9. Once the beans are done, add the spices and salt to taste.

Pinto beans are literally everywhere in Taiwan. You find it in the traditional markets, the supermarket, shaved ice, etc. In Chinese, pinto beans are 花豆 hua1 dou4.
