Red Chili Salsa
Ingredients - Makes 4-6 servings
1 large tomato (peeled and seeds removed)
1/8 onion
2 facing heaven chili peppers (see notes for translation and info)
1 red chili pepper (see notes for translation and info)
1 tbs cilantro
1 lime (juiced)
1 tbs tomato paste
1/4 lemon (juiced)
1 tsp cayenne pepper powder (adjust according to how much heat you want)
dash of salt.
Equipment
Blender - preferably a vita mix
Gloves or something to wrap your fingertips
Instructions
1. Depending on your blender's power, I would dice the cilantro, onion and tomato.
2. Put on some gloves so that you don't burn yourself while removing the chili seeds.
3. Cut and discard the stems and split the peppers open lengthwise as seen in the picture above.
4. Use water to rinse the seeds out and white part. Leave some seeds if you desire more heat!
5. Mince the peppers if you don't have a powerful blender.
6. Add all the ingredients in the blender.
7. Blend on high to make into a puree.
8. Salt some if the flavor is not there yet.
Notes - Different types of peppers in Taiwan
In Taiwan, it is extremely difficult to find jalapenos, habanero, arbol peppers, etc. The only spicy peppers available are Thai chili peppers (the short one) and long red peppers. These seem to have similar heat levels with arbol peppers. In Chinese, the Thai peppers are 朝天椒 chao2 tian1 jiao1, and the long red chili peppers are 辣椒 la4 jiao1.
